1 medium red snapper, whole
Olive oil
2 teaspoons garlic, minced
1 cup fresh tomato, diced
½ cup green onion, diced
1 lemon, sliced
1 teaspoon Italian seasoning
2 teaspoons paprika
1 cup green bell pepper, julienned
¼ cup parsley, chopped
Salt and pepper to taste
Place fish in a baking dish. Cut slits in the side and rub with olive oil and garlic. Mix all other ingredients except the parsley. Place tomato and pepper mixture on the snapper. Cover with foil and bake at 350 degrees for 45 to 1 hour. Remove from the oven and sprinkle parsley on top. Serve hot with spiced rice. Serves 2
