Bayou Shrimp Salad

1 lb. Medium shrimp, cooked
2 eggs, hard-boiled and chopped
1 cup mayonnaise
½ cup celery, diced
¼ Cup Green Onion, diced
¼ cup parsley, chopped
2 tablespoons Creole mustard
Pinch of paprika
Juice from 2 lemons
Salt and pepper to taste

Mix all ingredients together.  Serve on a bed of lettuce.  Serves 4.
