1 Large Chicken Breast
½ Cup Orange Marmalade
1 Tablespoon Horseradish
¼ Cup Chopped Parsley
¼ Cup Red Bell Pepper (julienned)
¼ Cup Green Onion (diced)
1 Oz. Olive Oil
½ Cup Flour
Salt and Pepper to taste
Roll chicken in flour to lightly dust. In a saucepan, cook the chicken in olive oil until cooked thoroughly. In another pan, combine all other ingredients and simmer for 5 minutes. Pour over chicken and serve hot.
