Holiday Long Island Roast Duck

1 Large Duck
2 Celery Stalks, Cut into Chunks
1 Large Carrot, Chopped
½ Large Onion, Cut into Chunks
2 Teaspoons Olive Oil
2 Teaspoons Garlic, Minced
Salt and Pepper to Taste

Stuff celery, carrots and onions into cavity of duck.  Rub olive oil all over the duck.  Next, rub garlic, salt and pepper all over duck.  Roast at 350 degrees for 2 ½ to 3 hours or until golden brown and crispy.  Serve with your favorite relish.  Serves 4-6
