1 Large Chicken Breast
½ Cup Flour
1 Oz. Olive Oil
½ Cup Orange Marmalade
2 Each Fresh Oranges, Sliced
1 Tablespoon Horseradish
¼ Cup Chopped Parsley
¼ Cup Red Bell Pepper, Julienned
¼ Cup Green Onion, Diced
Salt and Pepper to taste
Roll chicken in flour to lightly dust. In a saucepan heat the olive oil to medium heat and cook the chicken until it is well-done and golden brown. In another pan, combine all other ingredients and simmer for 5 minutes. Pour over chicken and serve hot.
