2 Pound chuck roast, uncooked
2 Ounces olive oil
1 Cup onions, diced
1 Cup celery, diced
1 Cup bell pepper, diced
1 Cup corn
1 Cup green beans
1 Teaspoon garlic, minced
½ Head cabbage, chopped
3 Cups tomatoes, crushed
1 Can Irish potatoes, diced
Salt and pepper to taste
Brown meat in olive oil in a braising pot. Remove meat and sauté vegetables in pot, except tomatoes and beans, until lightly brown. Stir in tomatoes and beans. Add meat back into pot and cover with twice as much water as ingredients. Simmer 2-3 hours on low heat or until meat falls apart. Garnish with freshly chopped parsley, salt and pepper. Serves 6-8.
