Select your favorite vegetables
Chef Jake's favorites are:
2 each Roma tomatoes
2 each red bell peppers
2 each zucchini squash
2 each green onion
2 each asparagus
2 each Chinese eggplants
Extra Virgin Olive Oil
2 Tablespoons minced garlic
1 Teaspoon Paprika
Salt and Pepper to taste
Juice from 1 lemon
Preheat oven to 400º
Wash vegetables. Cut all vegetable into 1-2" pieces. Place all vegetables in roasting pan. Coat the pieces of vegetables lightly with extra virgin olive oil. Season vegetables with garlic, paprika, salt and pepper. Squeeze the juice from one lemon over all vegetables. Place pan in preheated oven and roast until golden brown or approximately 20 to 30 minutes. Serve hot.
