1 Pound chicken breast, cooked and diced
½ Cup celery, diced
½ Cup purple onion, diced
2 Cups Granny Smith apples, sliced
1 Cup mayonnaise
¼ Cup pecans, chopped
½ Teaspoon sugar
¼ Cup parsley, chopped
1 Teaspoon soy sauce
¼ Cup red bell pepper, julienned
Juice from 1 lemon
Salt and pepper to taste
Mix all ingredients together and serve on fresh field greens. Serves 4-5.
