Mardi Gras Jambalaya
½ Cup Onion, Diced ½ Cup Celery, Diced ½ Cup Bell Pepper, Diced ½ Cup Green Onion, Diced 1 Cup Tomatoes, Diced 1 Tablespoon Garlic, Minced ¼ Tablespoon Red Pepper Pinch of Salt 1 Cup Smoked Sausage, sliced 1 Cup Chicken, Cooked and Diced ½ Pound Raw Shrimp, Peeled 1 Teaspoon Olive Oil 4 Cups Chicken Stock 2 Cups Rice, Uncooked
Sauté all ingredients in olive oil except the chicken stock and rice. Add chicken stock and rice; cook slowly until rice is done. Serve hot. Serves 4-6
